Ingredients: Maida (All purpose flour) : 2 cups Oil/butter/ghee : 4 tbsp slightly warm for dough + 2 cups for frying Water : 1 cup Lukewarm as required for dough Ajwain(Carom Seeds) : 1/2 tsp Salt : to taste. Recipe: In a bowl take maida (all purpose flour),to it add ajwain(Carom seeds) ,salt and slightly warm oil. Mix things well with your hands, so there are no lumps. Now add water little by little as required at time, and form a dough.Dough should be stiff .Knead the dough very well. Coat dough with little oil. Cover it with wet muslin cloth or plastic wrap and set aside for 20-30 minutes. Divide the dough in slightly bigger size equal balls. Take one ball and with the roller roll around 8 inch disc slightly thicker than roti(indian bread). With the help of the knife,cookie cutter or pizza cutter cut into diamond shapes or straight in a length. Do not stack the piece one over other and separate each cut. Meanwhile in a wok heat the oil on medium heat for frying.Check the temperature of the oil for frying by just dropping a tiny ball of dough into the oil.The ball should make the oil sizzle and slowly comes up to the top level of oil then your oil is ready for frying. Slowly drop the pieces into oil and deep fry them till crisp and slightly golden brown in color . Drain them on absorbent paper so the access oil is absorbed. Repeat same steps with other balls also. Once the matri are cooled down completely you can store them in air tight containers. Matris can be eaten as a evening snack with tea , coffee or with tomato ketchup,green or red chutneys. Tips: Make sure that the dough for matri is stiff , otherwise they will not be more crisp. Do not add too much oil/ghee/butter in the dough , other matris will become too oily. You can give different shapes as you like to your matris i.e daimond, round, strips,cashewnut shapes etc.
