Chickpea flour/ Gram flour/ Besan – 3 cups and 3 tbsp. Semolina / Rawa/ Sooji – 3 tbsp (optional). Ghee/ Clarified butter – 1 and 1/4 cup. Sugar – 2 and 1/4 cup. Cardamom / Ilaichi powder – 1/2 tbsp. Ground almonds – 1/2 cup. Almonds – slivered – 1/4 cup (for garnishing – optional). 1. 2. 3. 4. It takes 30 to 35 minutes to get this quantity of besan perfectly roasted, so have patience and continue. After 30 minutes, the color will change to a golden brown, there will be a nice earthy aroma all around the kitchen – add in the ground almonds and cardamom powder at this stage and switch off the gas. Let this whole deal cool for 20 to 25 minutes. Once the the besan is warm (not hot), which it should be after 25 minutes, add the sugar and mix. 10. Related 3 cups and. 3 tbsp Semolina. 1/4 cup Sugar. 1/4 cup Cardamom. 1/2 tbsp Ground almonds. 1/2 cup Almonds

Almond Burfi / Badam Burfi

Cut when burfi is warm. 10 minutes. 30 minutes. 30 ~ 35 pieces as shown in picture ( Picture may show big pieces but it is quite small ). 1 cup almonds. 1/2 ~ 3/4 cup milk. 1 1/4 cups of organic sugar. 1 cup ghee. 1/2 cup water. 2 cardamom pods or 1/2 tsp cardamom powder. 1. 2. Grind the blanched almonds, cardamom pods with 1/2 cup milk to a fine paste. 3. ( Since I am using organic sugar, I added 2 tbsp milk to remove dirt from the syrup. 4. When sugar syrup reaches one string consistency or candy thermometer shows 232 degree F. At medium heat, cook the mixture for another 7 ~ 10 minutes by adding remaining ghee in between. And you can also check the correct consistency by droping 1/2 tsp of mixture in a bowl of water.
