Ingredients

  • 2 potatoes
  • 2 cup mixed vegetables (peas, carrots, beans) 1 onion 1 spring coriander leaves ½ inch ginger 1 pod garlic 1 green chilli 1 tsp chilli powder ½ tsp coriander powder ½ tsp turmeric powder ½ tsp chat masala ½ tsp garam masala ingredients for seasoning 1 tsp coriander seeds 1 tsp mustard seeds 1 tsp jeera / cumin seeds pinch hing / asafoetida 2 tbsp cooking oil ingredients for batter 1 cup besan / gram flour 2 tbsp rice flour / corn flour salt to taste pinch of asafoetida pinch of baking soda Instructions boil or pressure cook potatoes, peel the skin, mash it and set it aside. chop onion and all the vegetables into small pieces. boil the vegetables (peas, carrots, beans) with a cup of water. cover and cook until they are fully cooked. drain the excess liquid and set it aside. add the cooked vegetables along with boiled potatoes and mash them. while mashing do not mash it too much. let there be a few lumps here and there. in a pan, heat a tbsp of oil and add mustard seeds. when it splutters add cumin seeds, coriander seeds and hing. and then onion. saute onions until translucent. Add finely chopped ginger, garlic and green chilies. cook for a 2 - 3 minutes. add chili powder, coriander powder, turmeric and salt, mix well and cook for 5 minutes or until the raw smell is gone. add the mashed potatoes and vegetables. mix everything well. now add coriander leaves, chat masala, garam masala and turn off the stove and let it cool. preparation of batter and bonda: mix gram flour, rice flour, chilly powder, turmeric powder, salt, baking soda. make a fairly thick batter by adding little water at a time to avoid lumps from formation. now add more water and make the batter little thin. (do not make it watery consistency) heat oil for frying. make small balls from the prepared vegetable mixture. dip the balls one by one in the batter and drop it in oil. turn both the sides and fry until golden. 3.5.3208
